I love desserts. I do not love the way that sugar makes me feel. Enter delightful paleo websites that have recipes for delicious desserts with a whole lot less sugar (and no dairy…win!). Often, they’re complicated and sometimes they still have too much sugar (it makes my hands swell).
I’ve started whipping up very simple desserts (I share them with the ‘Bachelor Babes’) and wanted to capture them here, too. Voila Dessert #1 is Chocolate Chip Cookie Dough. If you know me, you know that I love severely undercooked desserts, so it makes perfect sense that I love this one. If you can force yourself, it’s SO much better if you let it chill over night. If you’re feeling extra, roll it into little balls before you do that. If not, eat it with a spoon as I mostly do.
Without further ado, here’s the recipe:

1 cup almond flour (I use the Costco Blanched Almond Flour)
1tsp vanilla
2 tsp maple syrup
1/2 tsp salt (you may have to adjust this, I like the salty/sweet combo)
3-4 tbsp coconut oil (really, keep pouring until it comes together) I use organic butter flavored (don’t judge)
Finish off with liberal pour of chocolate chips.
If you’re feeling extra, roll it into little balls before you do that. If not, eat it with a spoon as I mostly do.
Voila.
